🗣 This name, label and beer are modern versions of 3 Minutes to Midnight, Bellwoods’s Cognac Barrel-Aged Imperial Stout with Cocoa and Cherry that they released in 2018.
In the 4 years since, they’ve fine-tuned the base recipe, experimented with adjuncts, gathered barrels, and sourced better ingredients for just about everything they make (which you can really taste).
The Stout that all that made possible was also aged in bourbon barrels for a year and conditioned on a massive amount of dried strawberries as well as a similarly crazy quantity of roasted cocoa nibs. The result is a sweet (but not too sweet), rich and smooth, strawberry- and bourbon-flavoured Stout that serves as a delicious dessert, or a rich and chocolatey bourbon drink to wet your whistle with!

🖍 Jet black and opaque body with a light brown and creamy foam that grows and shrinks slowly, leaving a thin layer.
👄 Very rich, velvety smooth and sticky
👅 Oaky bourbon backbone with notes of sweet dark cocoa, anise, marzipan and strawberry.
🏁 Lightly roasty aftertaste with a residual sweet bourbon note.
